So without much fuss.. Here are my Red Velvet Whoopie Pies with Peppermint filling they only make 12 big cookies and you need 24... to make them into sandwiches.. so don't double the recipe.. just make them twice....If you make them mini whoopie pies... the recipe makes 40 sandwich cookies...

If you have a small ice cream/cookie scoop your whoopie pies will be more uniform.. I do not have one .....
Here is the recipe:
1/2 cup butter, softened
1 cup packed brown sugar
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
1/2 cup buttermilk
1 1- oz bottle ( 2 tablespoons) red food coloring
Peppermint cream cheese filling (recipe included here)
1. preheat oven 375 Line a cookie sheet with parchment paper, set aside. In a large mixing bowl beat butter on medium to high speed for 30 seconds. Add brown sugar, cocoa powder, baking soda, and salt. Beat until combined, scraping side of bowl occasionally. Beat in egg and vanilla until combined. Alternately add flour and buttermilk, beating on low speed after each addition just until combined. Stir in food coloring.
2. Drop batter by rounded teaspoons 2 inces apart onto prepared cookie sheet. Bake in preheated oven for 7 to 9 minutes or until edges are set. Cool on cookie sheet for 2 minutes. Transfer cookies to a wire rack; cool.
3. spread Peppermint-Cream cheese filling on bottom half of the cookies. Top with another cookie...You may sprinkle crushed candy cane or peppermint candy's on top...
Peppermint-Cream Cheese Filling
IN a large bowl combine two 3 ounce packages softened cream cheese 3 tablespoons of softened butter, and 1/2 teaspoon peppermint extract. Beat with an electric mixer on medium speed until light and fluffy. Gradually add 3 cups of powdered sugar, beating well. If necessary, stir in enough milk, 1 teaspoon at a time, to make a filling of spreading consistency.
