So we have had a lot of snow days in New York and I have practiced handwriting with my son, let him play video games, read books and more.. but finally I had to succumb to the fact that I would have to bake something.. and it would be chocolate.. not really good for 2 ADHD people...
He loves to help me make them .. and eat them... so after lots of watercoloring.. I gave in.. chocolate...
then when they were in the oven .. We played Winter Bingo.. you can play this with any age from 3-up... and you can change it from pictures to words, to number or sounds... this was winter words.. but I did a lot of phonics.... like sssssssssssssssnowflake or PPPPPPPPPPPPPPPenguin..... I do custom orders for pre-k and K classes.. I made my son's class a set...
Here is the brownie recipe.. if your little one or your big one.....likes chocolate
Mississippi Mud-Loaded Brownies
This is not a recipe from scratch... which is good in a snowstorm.. since I did not have to go out and get anything.
1 18.8oz package of family style milk or dark chocolate your choice
2 large eggs
1/3 cup water
1/3 cup unsalted butter, melted
1 1/2 cups sweetened flaked coconut... ( if you don't like coconut omit it)
1/2 cup semisweet chocolate morsels
1/2 cups chopped pecans ( love)
3 1/2 cups miniature marshmallows
4 1/2 oz unsweetened chocolate, chopped
1 tablespoon unsalted butter, melted
1 1/4 cups sour cream
( i like daisy brand but it doesn't matter)
3 1/2 cups confectioners sugar
1. Preheat oven to 350 Spray a 13 x 9 inch baking pan with nonstick baking spray with flour, In a large bowl, combine brownie mix, eggs, 1/3 cup water, and 1/3 cup melted butter. Using a wooden spoon beat and then add coconut, chocolate morsels, and pecans. Spread into prepared pan.
2. Bake for 26-28 minutes... be sure firm to touch
Immediately sprinkle marshmallows on brownie layer, return to oven, and bake for 2 to 3 minutes longer to soften marshmallows. Let cool completely on a wire rack.. about 1 hour.
3. IN a small saucepan combine chopped chocolate and 1 tablespoon melted butter. cook, stirring constantly, over low heat until chocolate melts. Transfer to a large bowl, add sour cream and confectioners' sugar. Beat at medium speed with an electric mixer until fluffy. Pour and spread evenly over marshmallows. Cover and chill for 2 hours .. cut into squares.
When he went to bed... I decided not to eat another one.. instead I worked on my labels for the bottom of my hershey kisses.. I took the picture below... I am working on a photo watermark... so people can stop asking me if the pictures on my blog are mine.
I think this is such a fun way to give kisses.... I plan to give some to the teachers in my
son's class and have some at my next party.
