I am making Quesedilla's tonight for dinner
I wanted to make a mango salsa to go with the Quesedilla's but I am not sure if I know how, gotta look around for a good recipe. I love mango, and so does the kid.
Here is the Mojito recipe: (very refreshing if you like mint)
1 teaspoon powdered sugar
Juice from 1 lime (2 ounces)
4 mint leaves
1 sprig of mint
Havana Club white Rum (2 ounces)
2 ounces club soda
My son will eat honeydew melon and mango kabobs anytime not just todayHavana Club white Rum (2 ounces)

I was told by a friend how to make a Mojito Cake and I would love to surprise the family with this tonight if I get to it I will post it.
Here is the recipe in case you get to it
1 box of white cake mix I like super moist
1 cup unflavored carbonated water
1/3 cup vegetable oil
1/4 rum or teaspoon of rum extract plus 1/4 cup water
3 tablespoons chopped fresh mint leaves
2 tablespoons grated lime peel
3 egg whites
for the icing glaze
1/2 cup butter or margarine
1/4 cup water
1 cup granulated sugar
1/2 cup rum or 2 teaspoons of rum extract plus 1/2 cup water
the top_
cool whip or 1 cup of whipping cream
2 tablespoons powdered sugar if not using cool whip
more mint leaves if desired
*Heat the oven to 350o I spray the pan with pam with flour
* IN a large bowl, I beat cake with an electric mixer for about 30 seconds on low. than on medium for 2 minutes- I scrape the bowl as I go
*Now it's ready to bake 28-33 minutes. My friend cooled it for about 15 minutes
*While it bakes in 2 quart saucepan, mix the ing for the glaze heat to boiling over hight heat. Stir alot. Reduce heat to medium and continue to boil for about 3 minutes or so. Glaze should be thickened.
*Poke warm cake every inch with fork tines( this is a bit like the jello poke cake) Pour glaze slowly over cake. Cool about one hour and serve after your latin meal. YUM
I hope I have time to do it today.
If you are not feeling so adventurous than make Margarita dip it's easy and it gets you to eat fruit
* the sugar on the rim is easy, place colored sugar in a plate, wet, margartia glass and dip in sugar VIOLA!

2/3 | cup frozen (thawed) margarita drink mix (from 10-ounce can) |
1/4 | cup orange juice |
2 | teaspoons grated lime peel |
1/2 | cup whipping (heavy) cream |

1. | Beat cream cheese, margarita mix, orange juice and lime peel in large bowl with electric mixer on low speed until smooth. | |||||||||
2. | Beat whipping cream in chilled small bowl with electric mixer on high speed until stiff. Fold into cream cheese mixture. Cover and refrigerate 1 hour. | |||||||||
3. | Serve dip with strawberries. |
