Rhubarb Brown Betty

I had a boyfriend years ago who's mother always made Rhubarb every Memorial day... I was not a huge fan back then.. but I like it now.. I associate it with Memorial day now.. Most Memorial day celebrations I a make pear brown Betty's or apple but This year I am making... Grilled Rhubarb Brown Betty, it's fun because it is an old fashioned dessert.


You will need:
Rhubarb 5 stalks, cut into 1inch pieces (about 4 cups)

You will need 3/4 cup plus 2 tablespoons of packed light brown sugar

2/3 cup plus 1/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground ginger
pinch of cloves


Preheat a grill to medium low. Whisk the(1 cup) Panko, brown sugar, 1/4 cup granulated sugar, the cinnamon, allspice, ginger and cloves ( only if you like cloves) in a medium bowl, toss the rhubarb with the remaining 2/3 cup granulated sugar and the lemon juice to coat.
Next butter a shallow 8 inch oven proof skillet or a flameproof baking dish. Sprinkle 3 tablespoons of the breadcrumbs mixture in the bottom of the skillet. Top with the rhubarb, then sprinkle with the remaining crumbs and the almonds. Dot with the cut up butter.
(4 tablespoons of cold unsalted butter, cut into small pieces and some for the skillet)
  Put the skillet on the center of the grill; close the lid or place a disposable roasting pan over the skillet. Grill until the filling is bubbly and the topping is golden brown and crisp, 15 to 20 minutes. Serve warm and top with strawberry ice cream.

   A betty is a classic fruit dessert from the colonial era. It's like a crisp, but the topping is made with breadcrumbs...

Yummy! Can be made with less butter and sugar for the health-concious:) Also don't worry too much about cutting the rhubarb - it will just boil down:)

This is sooooo good-I added some strawberries & I might broil it for a bit next time to crispen up the top a little. Serve with ice cream or cool whip.
