Meatless Monday,kids cook monday

  I have been asked by the good people at Meatless Monday to join in the fun and post about dinner.
The website www.meatlessmonday.com is a great resource for healthy snack choices.. I have been asked to join there new campaign called Kids Cook Monday. It is a way for mother bloggers or father bloggers... even grandma bloggers... to cook together with their children.... to prepare... healthy dinner without meat.. once a week. This campaign also helps the environment and saves money on the grocery list.



My son and I caught a summer cold with a horrible sore throat a few days ago, we are feeling much better but we love to make chicken soup when we are sick. We have decided to make Zucchini and tortellini soup for our dinner with salad and bread.

We read a god book called... and we read some poetry from this book we got out of the library..

 We grow our own Zucchini so first we picked it.....

Then we  had to chop the carrots, celery, turnips and parsnips.

My son has a hard time with the cheese grater.. so grating the zucchini  was a bit of a challenge for him..

 Between the two of us we got the 2 zucchini's grated.








The entire recipe is as follows:

2 onions halved
2 cloves of garlic
2 large carrots chopped
2 large celery ribs chopped
1 med. turnip
1 lg parsnip chopped
1 tsp salt
tortellini dry 1 or 2 cups your choice
3 med. zucchini, trimmed and grated
freshly ground black pepper
water 2 cups of water
3 cups of vegetable broth
Parmesan cheese

Add water and 3 cups vegetable broth. Heat till boiling, reduce heat, simmer uncovered for 20 minutes. Add tortellini  and zucchini. Simmer 10 minutes until pasta is cooked. Add seasonings and Parmesan cheese.
Serve for lunch or dinner, add a salad... and or  bread.
